- 1 ½ cups of dried green lentils
- 2 in handfuls of swiss chard cut in ribbons
- 1 yellow onion chopped
- 2 cloves of garlic minced
- 1 apple
- 4 cups of vegetable stock
- 2 cups of water
- 1 can of coconut milk full fat
- 1 tsp of turmeric
- ½ tsp of cardamom
- ½ tsp of allspice
- ½ tsp of cinnamon
- salt to taste

- Add lentils, vegetable stock, water, and spices to large pot and bring to a boil, then reduce to a simmer.
- Meanwhile saute onions and garlic with a little olive oil in a frying pan.
- Add onion, garlic, and apple to the lentils
- Cook until lentils are tender and then add coconut milk and swiss chard and mix.
